Hard-Boiled Eggs, Reconsidered

Hard-boiled eggs earn their reputation through practicality: one large egg provides approximately 6.3 grams of protein and all nine essential amino acids. They’re inexpensive, easy to pack, and equally comfortable in a lunchbox or atop a colorful salad. Boiling also requires no added cooking fat. Although some research links moderate egg consumption with favorable heart-health outcomes, those findings don’t prove that eggs prevent disease; overall diet and individual health needs still matter.

The crucial detail comes after cooking. Refrigerate hard-boiled eggs within two hours and eat them within one week, whether peeled or still in their shells. Keep the refrigerator at 40°F or below. For easier peeling, eggs refrigerated for a little longer often work better than very fresh ones; cooling them promptly can help with handling. From deviled eggs to grain bowls, this familiar staple offers plenty of possibilities—provided convenience never pushes safe storage out of the picture.
